If setting 28 tastes sour, bitter or weak

Use these as controlled experiments, not guaranteed diagnoses:

  • Sour and thin: try 26, keeping the recipe unchanged. If the result improves but still lacks sweetness, try 24 on the following brew.
  • Bitter with a drying finish: try 30. Compare after the coffee cools enough to taste clearly. Dark roast bitterness may remain even after changing the grind.
  • Pleasant but too weak: keep the grind setting and increase the coffee dose slightly. Changing strength and grind together makes the result harder to interpret.
  • Balanced and enjoyable: keep your setting, even if it differs from someone else’s recommendation.

Those two-setting moves are suggested experiments, not independently measured optimum settings. There is no verified number that guarantees the same flavour across different beans and recipes.

When switching back from another brewing method, grind a small purge before collecting your dose. Baratza explains that grounds remaining in the chamber and chute retain the previous grind size; its suggested purge is one or two seconds. A Hoffmann-style settling method can use a finer setting

If you follow a recipe that breaks the crust, waits for sediment to settle and barely lowers the plunger, you do not have to stay at the conventional coarse starting point.

For example, Servant Coffee’s adaptation of James Hoffmann’s method specifies 30g coffee, 500g water and a medium grind. After four minutes, you break the crust and remove floating material, wait another five to eight minutes, then lower the filter only to the liquid’s surface and pour gently. For that style of brewing, try 20 on the Virtuoso Plus as an experimental starting point. This is an editorial translation into the grinder’s adjustment range, not an official Hoffmann setting or a tested conversion from Servant Coffee’s grinder. Taste the result and adjust in small steps.

Choose one complete method while finding your setting. Comparing a four-minute brew at 28 with a much longer settling brew at 20 changes both grind and technique. Either cup may taste better, but that comparison cannot tell you which change caused the improvement.

Sediment does not mean you should turn toward 40

The Virtuoso Plus can produce fine particles even when the main grind looks coarse. Increasing the setting is therefore not a reliable way to eliminate sludge.

In independent testing, GearLab measured 59% of the Virtuoso Plus’s pour-over grounds within its target size range, using five mesh sieves. Another 23% fell in neighbouring ranges. GearLab also reported reduced consistency at the coarse end and extra fines relevant to French press brewing. The practical implication is limited but useful: do not assume the coarsest setting produces the cleanest cup. If the flavour is already good, first try the settling and gentle-pouring technique above. Leave the sediment-heavy final portion in the press rather than pouring every last drop.

A sudden, substantial change in grind appearance deserves a different response. Unplug the grinder before inspecting or cleaning it, and check that the removable ring burr is properly seated. Buy a scale only if dose control is missing

Nothing here justifies a blanket product warning or replacing a working Virtuoso Plus. Finding its French press setting normally requires controlled brewing adjustments.
